Instructions

  1. Peel and devein shrimp, optionally leaving tails on, then lightly salt.

  2. Set up three shallow dishes: one with flour, one with egg beaten with yogurt or milk, and one with panko.

  3. Coat each shrimp sequentially in flour, then egg mixture, then panko crumbs.

  4. In a heavy-bottomed pan, heat oil to 360°F.

  5. Fry coated shrimp in a single layer for about 2 minutes per side until deeply golden brown.

  6. Remove fried shrimp and drain on a rack or paper towels.
