Instructions

  1. Preheat deep fryer oil to 370 F, and preheat oven to 200 F if keeping fritters warm.

  2. Sift together flour, baking powder, salt, and paprika.

  3. Combine beaten egg, milk, and lobster.

  4. Add the wet mixture to the dry ingredients and mix until well blended.

  5. Drop the batter by tablespoonfuls into the hot oil, frying for 4 to 6 minutes until golden brown; ensure oil returns to 370 F between batches.

  6. Remove fritters to a paper towel-lined plate to drain.

  7. Serve warm with lemon wedges.
