Fried Lobster Balls

Instructions

  1. Preheat 1/2 inch of oil in a heavy skillet to 375°F or prepare a deep-fryer.

  2. Combine breadcrumbs, flour, baking powder, garlic powder, dill weed, lemon pepper, salt, and Parmesan.

  3. Stir in lemon juice, lobster, bell pepper, sweet onion, and eggs until combined.

  4. Rest the mixture for 15 minutes.

  5. Form the lobster mixture into 1 1/2-inch diameter balls.

  6. Deep-fry until golden brown, then drain on paper towels and serve.
