Fried Garlic Potatoes

Instructions

  1. Rinse and thoroughly pat dry the potatoes.

  2. Heat olive oil in a large nonstick skillet over medium heat. Add potatoes in a single layer, frying in batches if necessary, and cook, turning frequently, for 10 minutes until browned.

  3. Incorporate unpeeled garlic cloves, cover, and reduce heat to low. Cook, stirring occasionally, for 15-20 minutes until potatoes are tender.

  4. Remove garlic cloves, peel, mash or mince finely, then return to the skillet.

  5. Stir in lemon juice and green onion, cooking for 1-2 minutes until heated.

  6. Season with parsley, salt, and pepper, then serve immediately.
