Fried Cornbread Fritters

Instructions

  1. In a medium bowl, combine cornmeal, salt, self-rising flour, water, bacon drippings, milk, and egg to create a thick, spoonable batter.

  2. Heat a cast-iron skillet until hot, then add oil and heat until shimmering.

  3. Drop batter by the tablespoon into the hot oil and cook until edges bubble and the center sets.

  4. Flip fritters and cook the other side.

  5. Transfer cooked fritters to a paper towel-lined plate to drain.

  6. Serve immediately, optionally with honey and butter.
