Fried Cod Fish Ball Tapas (Bolas de Bacalao Frito) Recipe

Delicious fried cod balls are prepared by mixing flaked cod with potatoes, herbs, and egg, then breading and frying until golden.

Instructions

  1. Start boiling water for potatoes. Rinse salt cod, cut into 1 to 1.5 inch pieces, then soak in water for at least 24 hours, changing water 2-3 times.

  2. After soaking, drain and rinse the cod, then pat dry. Boil potatoes until tender, cool, peel, and mash them in a large bowl.

  3. Finely chop green onions. Sauté half of the onions in olive oil. Add milk and heat, then add cod and simmer for 10 minutes.

  4. Remove cod from the pan, flake with a fork, and remove any bones. Combine the flaked cod with the mashed potatoes.

  5. Mix in the remaining chopped onions, parsley, nutmeg, olive oil, and lemon juice.

  6. Beat one egg, mix into the cod-potato mixture, and refrigerate for 30 minutes to firm.

  7. Prepare two shallow bowls: one with a beaten egg, the other with mixed breadcrumbs and flour.

  8. Shape the chilled mixture into slightly flattened balls.

  9. Heat 1/2-inch olive oil in a large frying pan. Roll each ball in breadcrumbs, dip in beaten egg, then fry over medium-high heat until golden on all sides.

  10. Remove fried balls and drain on paper towels.
