Instructions

  1. Heat oil to 360 F for frying.

  2. Brine chicken in buttermilk for 48 hours or overnight; then remove and drain excess liquid.

  3. Combine flour, salt, and pepper in a dish. Dredge chicken in flour, then buttermilk, then flour again.

  4. Fry chicken in 360 F oil for 10 minutes until cooked and crunchy; drain on paper towels and season with salt.

  5. Turn on broiler. Spread mustard on bun halves, topping one with ham and the other with cheese.

  6. Broil bun halves until cheese melts and ham crisps. Add fried chicken, close, and serve immediately.
