Instructions

  1. Combine shredded cheese, 3 tablespoons flour, and one egg white; knead into a firm dough and refrigerate for at least 30 minutes.

  2. In a saucepan over medium heat, combine guava paste, vinegar, and water; whisk until smooth, then remove and allow to cool.

  3. Heat oil to 350 F in a deep fryer or heavy-bottomed pot.

  4. Form the chilled dough into tablespoon-sized balls, dredge them in the remaining 1 1/4 cups flour, then fry in batches for 2 to 3 minutes until golden brown.

  5. Remove cheese balls from oil, drain on paper towels, and serve with the cooled guava dipping sauce.
