Instructions

  1. Heat 1 inch of oil to 350 F in a large pot.

  2. Rinse and thoroughly pat dry the squid pieces.

  3. Prepare three bowls with flour, beaten eggs, and semolina.

  4. Dredge calamari in flour, shake off excess, dip in egg, then coat in semolina.

  5. Fry calamari in batches for 1 to 2 minutes until golden, then transfer to a paper-towel-lined plate to drain.

  6. Season with salt and serve immediately with lemon wedges.
