Fried Avocado

Crispy panko-coated avocado slices are deep-fried and served with a zesty cilantro-lime mayonnaise, ready in 25 minutes.

Instructions

  1. Heat about 1 inch of vegetable oil in a deep pan to 3500F.

  2. In a small bowl, whisk 1/2 cup mayonnaise, 1 tablespoon chopped cilantro, 1 tablespoon lime juice, 1/4 teaspoon smoked paprika, 1/4 teaspoon garlic powder, and a dash of cayenne pepper and salt; refrigerate.

  3. Slice 2 large avocados, remove pits and peels, then cut each half into 4-5 strips.

  4. Prepare a breading station with three bowls: one with 1/2 cup flour, 1/2 teaspoon salt, and a dash of black pepper; a second with 2 beaten eggs; and a third with 1 cup panko breadcrumbs.

  5. Dredge each avocado strip in flour, then egg, then panko breadcrumbs, pressing to coat well.

  6. Fry 4-6 avocado strips for approximately 2 minutes until golden brown, then transfer to a paper towel-lined plate. Repeat with remaining strips.

  7. Serve the fried avocado with the prepared cilantro-lime mayo.
