Fresh Tomato Pasta Sauce

A fresh tomato marinara sauce, perfect for end-of-summer use with pasta, meatballs, or pizza.

Instructions

  1. Heat oil in a large saucepan over medium-high heat; sauté onion for 5 minutes until tender.

  2. Reduce heat to medium, add garlic, and sauté for 1-2 minutes without browning.

  3. Stir in tomatoes, tomato paste, oregano, basil, salt, sugar, and bay leaf; bring to a simmer.

  4. Lower heat to low and simmer for 1.5 hours, stirring occasionally with the lid slightly ajar.

  5. Discard the bay leaf. Serve immediately or refrigerate for up to four days.
