Instructions

  1. Simmer prepared tomatoes in a large stockpot over medium heat, stirring occasionally, for about 45 minutes until tender.

  2. Place a food mill or sieve over a large bowl and process the tenderized tomatoes to separate the juice from solids.

  3. Return the extracted tomato juice to a clean pan and heat over medium-high heat.

  4. Season the juice with salt, pepper, and optional spices like paprika, onion powder, celery salt, cayenne, chili powder, or hot sauce, starting with small amounts and adjusting to taste.

  5. Bring the seasoned juice to a boil, then continue boiling for 5 minutes before removing from heat.

  6. Preserve the hot juice by canning (using bottled lemon juice or citric acid) or cool it for freezing or refrigeration.
