Combine tomato sauce with water. In a food processor, blend tomatoes with basil, egg whites, and sugar until well mixed. Stir the blended mixture into the tomato sauce and water.

Transfer the mixture to a large pan and bring to a boil, whisking constantly. Reduce heat to simmer for 15 minutes without disturbing the rising egg white crust, which will clarify the soup.

Line a sieve with muslin or a clean tea towel. Carefully ladle the egg white crust into the sieve, then slowly ladle the liquid over the crust, allowing it to filter through without forcing.

Return the clarified liquid to the pan and reheat until hot but not boiling. Serve immediately in hot soup bowls, garnishing with basil if desired. For later use, cool and refrigerate, then reheat similarly.
