Instructions

  1. Roughly chop tomatoes, shallot, and chile (optional).

  2. Puree chopped ingredients in a blender until smooth, processing in batches as needed.

  3. Strain the puree through a sieve or food mill to remove seeds and peels.

  4. Mix in lemon juice, salt, pepper, and hot sauce or horseradish; adjust seasonings to taste.

  5. Pour into a pitcher, cover, and chill thoroughly for at least one hour.

  6. To prepare a drink, combine 1.5 ounces vodka with 3 ounces mix over ice in a highball glass, or serve without vodka as a virgin mary. Garnish with a celery stalk or pickled green bean.
