Fresh Tomato and Basil Bruschetta

Instructions

  1. Preheat the oven to broil.

  2. Combine chopped tomatoes, basil, garlic, and salt in a small bowl; set aside.

  3. Arrange bread slices on an oiled baking sheet and brush tops with olive oil.

  4. Broil bread for 1 minute until lightly toasted.

  5. Remove bread from the oven, spoon 2 tablespoons of the tomato mixture onto each slice, and top with mozzarella cheese.

  6. Return to the oven and broil for 30 seconds, watching carefully until the cheese melts and bread edges are lightly browned.

  7. Cool for a few minutes, then serve immediately.
