Fresh Succotash With Okra, Tomatoes, Lima Beans, and Corn

Instructions

  1. Prepare vegetables: Wash and slice okra into 1/2-inch rounds; rinse lima beans; peel, core, deseed, and dice tomatoes.

  2. Combine prepared tomatoes and okra in a large pot with salt, pepper, and 1/2 cup water.

  3. Cover the pot and bring to a boil over high heat, then reduce heat to low and simmer for 15 minutes.

  4. Add lima beans and simmer for another 15 minutes.

  5. Stir in corn kernels and cook for 20 additional minutes.

  6. Add butter and stir to blend, then serve hot.
