Fresh Strawberry Buttercream Recipe

Instructions

  1. Clean strawberries, remove hulls, roughly chop, then combine with sugar in a bowl and let sit for 15 minutes.

  2. Process the sugared strawberries in a food processor until a thick purée forms, optionally straining for a smoother frosting.

  3. In a stand mixer, beat butter with two cups of confectioners' sugar on low speed.

  4. Add the strawberry purée, vanilla extract, lemon juice, and rosewater, then whip until light and fluffy.

  5. Gradually incorporate additional confectioners' sugar until the buttercream reaches your desired consistency.
