Fresh Southern-Style Collard Greens Recipe

A traditional Southern side, these collard greens are slow-simmered with diced bacon or hog jowl and onions, perfect alongside cornbread.

Instructions

  1. Start boiling 6 cups of water in a large stockpot.

  2. Wash collard greens thoroughly, remove thick stalks and veins, then chop or cut into 1/2-inch strips.

  3. Cook diced bacon or hog jowl in a skillet to render fat; remove bacon, discard or save drippings.

  4. Add cooked bacon, onions, salt, red and black peppers, and seasoned salt to boiling water; stir in greens, adding in batches as needed.

  5. Cover and simmer for approximately 1 hour, or until tender.

  6. Serve with cornbread and optional hot pepper vinegar or sauce.
