Fresh Prawn Pickle

Instructions

  1. Clean, shell, devein, and pat dry the prawns.

  2. Combine salt and turmeric, rub onto prawns, and marinate for 1 hour.

  3. Process red chiles, ginger, garlic, and cumin seeds with a portion of the vinegar to form a smooth paste.

  4. Heat 4 tablespoons oil over medium heat; stir-fry prawns until golden, then drain and cool.

  5. Fry the spice paste in the remaining 3 tablespoons oil until oil separates. Stir in the remaining vinegar, add salt if needed, and cook for 15 minutes. Cool completely.

  6. Combine cooled prawns and spice mix in a pickling jar; mix well and rest for a few days before serving.

  7. Serve with rice or daal.
