Fresh Plum Pie

Instructions

  1. Preheat the oven to 425 F.

  2. Prepare pie pastry, then roll half of it to line a 9-inch pie plate.

  3. In a large bowl, combine tapioca, sugar, salt, cinnamon, and plums.

  4. Pour the plum mixture into the pastry-lined pie plate and dot with butter.

  5. Roll the remaining pastry, cover the fruit, trim edges to a 1/2-inch overhang, flute, and cut several 1 1/2-inch slits in the top.

  6. Bake for 45 to 55 minutes, or until bubbly and browned, shielding edges with foil if necessary.
