Fresh Plum Pie
A delicious plum pie combines fresh plums with your choice of pastry, enhanced by optional cinnamon.

Preheat the oven to 425 F.

Prepare pie pastry, then roll half of it to line a 9-inch pie plate.

In a large bowl, combine tapioca, sugar, salt, cinnamon, and plums.

Pour the plum mixture into the pastry-lined pie plate and dot with butter.

Roll the remaining pastry, cover the fruit, trim edges to a 1/2-inch overhang, flute, and cut several 1 1/2-inch slits in the top.

Bake for 45 to 55 minutes, or until bubbly and browned, shielding edges with foil if necessary.
