Fresh Pasta for Two People

Fresh homemade pasta offers a silky texture and can be easily prepared for two in about 30 minutes using a pasta roller.

Instructions

  1. Combine 3/4 cup all-purpose flour, 1 large egg, and 1 teaspoon olive oil in a food processor, then pulse until the mixture is crumbly but holds when pinched; add 1/2 teaspoon water if necessary.

  2. Transfer the dough to a board, form it into a ball, and knead briefly until smooth; flatten it into an oval and dust lightly with flour.

  3. Set a pasta roller to its widest setting (1) and feed the dough through; fold the strip into thirds, press, and repeat feeding and folding several times, dusting as needed, until the dough is smooth and elastic.

  4. Advance the roller to the second widest setting (2) and pass the dough through twice without folding.

  5. Continue rolling the dough through progressively thinner settings, one notch at a time, until it reaches the next-to-last setting, ensuring it is thin but not transparent; dust with flour if sticky.

  6. Cut the pasta as desired by hand or using a machine attachment, or use the sheets for lasagna or ravioli; cook immediately or allow it to dry on a lightly floured surface.
