Instructions
-
Combine 3/4 cup all-purpose flour, 1 large egg, and 1 teaspoon olive oil in a food processor, then pulse until the mixture is crumbly but holds when pinched; add 1/2 teaspoon water if necessary.
-
Transfer the dough to a board, form it into a ball, and knead briefly until smooth; flatten it into an oval and dust lightly with flour.
-
Set a pasta roller to its widest setting (1) and feed the dough through; fold the strip into thirds, press, and repeat feeding and folding several times, dusting as needed, until the dough is smooth and elastic.
-
Advance the roller to the second widest setting (2) and pass the dough through twice without folding.
-
Continue rolling the dough through progressively thinner settings, one notch at a time, until it reaches the next-to-last setting, ensuring it is thin but not transparent; dust with flour if sticky.
-
Cut the pasta as desired by hand or using a machine attachment, or use the sheets for lasagna or ravioli; cook immediately or allow it to dry on a lightly floured surface.
