Instructions

  1. Simmer 1/3 cup heavy cream over medium heat; remove, add 1/3 cup chopped mint leaves, cover, and steep for 15 minutes.

  2. While mint steeps, combine chopped chocolate and room temperature butter in a bowl.

  3. After 15 minutes, reheat the cream just below boiling; strain it into the chocolate and butter, discarding mint.

  4. Whisk until smooth ganache forms, then press plastic wrap onto the surface and refrigerate for 2-3 hours until firm.

  5. Once firm, dust hands with cocoa powder and roll ganache into small balls using a scoop or teaspoon.

  6. Melt chocolate coating in the microwave; dip truffles using a fork or tool, tap off excess, and place on a foil-covered baking sheet.

  7. While wet, press a small mint leaf onto each truffle; note that untreated leaves will wilt.

  8. Refrigerate truffles for 20 minutes to set chocolate; store in an airtight container for up to a week and serve at room temperature.
