Fresh Mango Cobbler

Instructions

  1. Preheat the oven to 375 F and lightly spray a 1 1/2-quart baking dish.

  2. Prepare 4 cups of peeled and sliced or diced mangoes.

  3. In a medium saucepan, combine 2/3 cup sugar, cornstarch, water, lemon juice, and the prepared mangoes.

  4. Bring the mixture to a boil over medium-high heat, then reduce to low and simmer for 5 minutes until the fruit is tender.

  5. Pour the hot mango and syrup into the prepared dish, then dot with butter and sprinkle with cinnamon sugar.

  6. In a separate bowl, blend flour, the remaining 1/3 cup sugar, baking powder, and salt. Cut in shortening until crumbly, then add milk and mix.

  7. Spoon the dough over the hot fruit mixture.

  8. Bake for 25 to 30 minutes, or until the topping is golden brown.

  9. Serve warm or cold with ice cream or whipped cream.
