Instructions

  1. Heat milk, cream, and salt in a heavy-bottomed saucepan over medium heat, stirring occasionally, until it reaches 190 F.

  2. Remove the pot from heat, add lemon juice or vinegar, and stir briefly to incorporate as curds begin to form.

  3. Let the mixture sit undisturbed for 5 minutes.

  4. Line a colander or fine-mesh strainer with cheesecloth, place it over a bowl, and pour the mixture into it.

  5. Allow the ricotta to strain for 30 minutes to 4 hours, or until desired consistency is achieved; refrigerate for longer straining periods.
