Fresh Fruit Fritters

Light and crispy fresh fruit fritters are prepared by battering and deep-frying, then served with powdered sugar or cinnamon sugar.

Instructions

  1. Heat oil in a deep fryer or heavy kettle to 370 F.

  2. Sift flour, baking powder, sugar, and salt together.

  3. Combine egg yolks, milk, and 1 tablespoon corn oil in a bowl, blending well.

  4. Beat egg whites to stiff peaks, then fold into the batter.

  5. Stir fruit chunks into the batter until coated.

  6. Fry battered fruit in small batches in the hot oil for 3 to 4 minutes per batch.

  7. Drain on paper towels.

  8. Serve hot fritters sprinkled with powdered sugar or rolled in cinnamon sugar.
