Fresh Corn Fritters
Easy corn fritters offer a simple, delicious way to savor fresh corn by frying a basic batter of corn, egg, and flour.

Instructions

Heat approximately 1/4-inch of oil in a large non-stick skillet over medium heat to 350 F.

Cut corn kernels from the cobs into a bowl, then beat an egg and thoroughly combine it with the corn.

Sprinkle salt and flour into the corn mixture, stir well, then cover and chill for 30 minutes.

Drop 1/4-cup mounds of batter into the hot oil, flatten them, and cook for 5 to 6 minutes until golden brown on one side.

Flip the fritters and cook for 3 to 4 minutes more until the other side is browned.

Transfer fritters to a paper towel-lined plate or a cooling rack to drain, repeating with the remaining batter, then serve immediately. Optionally, keep fritters warm in a 250 F oven and garnish with parsley.
