Fresh Corn Fritters

Instructions

  1. Heat approximately 1/4-inch of oil in a large non-stick skillet over medium heat to 350 F.

  2. Cut corn kernels from the cobs into a bowl, then beat an egg and thoroughly combine it with the corn.

  3. Sprinkle salt and flour into the corn mixture, stir well, then cover and chill for 30 minutes.

  4. Drop 1/4-cup mounds of batter into the hot oil, flatten them, and cook for 5 to 6 minutes until golden brown on one side.

  5. Flip the fritters and cook for 3 to 4 minutes more until the other side is browned.

  6. Transfer fritters to a paper towel-lined plate or a cooling rack to drain, repeating with the remaining batter, then serve immediately. Optionally, keep fritters warm in a 250 F oven and garnish with parsley.
