French White Chocolate Soufflé

Instructions

Preheat oven to 375 F.

Butter a large soufflé dish and coat it with 1/4 cup granulated sugar.

Combine salt, all-purpose flour, and the remaining 1/4 cup plus 1 tablespoon sugar.

Melt white chocolate in a heatproof bowl over simmering water, stirring constantly.

Remove chocolate from heat and stir in egg yolks until fully combined.

In a separate bowl, beat egg whites with cream of tartar on medium-high speed until soft, glossy peaks form.

Continue beating on high, add vanilla, then gradually incorporate the salt-flour-sugar mixture until stiff, glossy peaks form.

Gently stir 1/3 of the egg whites into the chocolate mixture, then carefully fold in the rest until evenly colored and bubbly.

Spoon soufflé into the prepared dish. Bake immediately for 25 to 30 minutes, or allow to rest covered for up to 30 minutes before baking, until risen with a crusty exterior.

Serve with a dusting of powdered sugar, if desired.
