French-Style Lobster Bisque

Instructions

  1. Melt butter in a large pan, then stir in flour, a pinch of salt and pepper, and paprika.

  2. Gradually whisk in milk, followed by chicken stock and white wine, continuously stirring until the mixture is smooth and slightly thickened, ensuring it does not boil.

  3. Add onion and carrots, then simmer for 10 minutes, making sure not to boil the mixture.

  4. Stir in the cooked lobster meat, then taste and adjust seasoning as desired.

  5. Finally, stir in cognac and cream, and heat the bisque through until piping hot.

  6. Serve in warm bowls with a crusty baguette on the side.
