Instructions

  1. Microwave water, vinegar, and saffron for 30 seconds, then mix until a yellow liquid forms.

  2. Combine bread chunks in a bowl with the saffron mixture and mix thoroughly.

  3. Transfer the bread mixture to a food processor; add garlic, egg yolks, and chili powder. Blend for 30 seconds, scraping sides.

  4. Slowly drizzle in olive oil while blending on low until combined, then season with salt.

  5. Serve the thick, mayonnaise-like sauce immediately or refrigerate until chilled.
