Instructions

  1. Heat olive oil in a large saucepan.

  2. Sauté chopped shallots until translucent, then add minced garlic and cook for a few minutes.

  3. Add chicken stock, pumpkin, and potatoes to the pan; bring to a simmer.

  4. Simmer vegetables for 35 to 50 minutes until tender.
