French Onion Twice-Baked Potatoes

Instructions

  1. Preheat the oven to 425 F.

  2. Poke 3 washed russet potatoes, then microwave them covered for 2 1/2 minutes, flip, and microwave for another 2 1/2 minutes until slightly tender.

  3. Rub the hot potatoes with 1 tablespoon olive oil and 1/4 teaspoon salt, then bake on an oven rack for 15-20 minutes, flipping once, until fork-tender; transfer to a foil-lined baking sheet.

  4. Halve the potatoes, scoop out the insides into a bowl, and carefully keep the skins intact.

  5. In the bowl, mix the potato insides with 5 tablespoons unsalted butter, 1 ounce French onion soup seasoning, and 1/3 cup sour cream.

  6. Evenly fill the potato skins with the mixture, top each with 1/3 cup shredded Gruyère cheese, and return to the baking tray.

  7. Switch the oven to high broil, place the tray on the upper rack, and broil for 2-3 minutes until the cheese is golden and bubbling.

  8. Garnish with fresh chives if desired, and serve.
