Instructions

  1. Preheat the oven to 375 F and butter a large gratin dish.

  2. Sauté onion in olive oil for 5 minutes in a saucepan. Stir in flour for 30 seconds, then add milk, salt, poultry seasoning, and pepper, stirring 3 to 5 minutes until the sauce thickens.

  3. Stir broccoli, zucchini, spinach, and Cantal or cheddar cheese into the sauce; bring to a simmer, then transfer to the buttered gratin dish.

  4. Mix breadcrumbs, Parmesan cheese, and melted butter, then sprinkle over the gratin.

  5. Bake in the preheated oven for 30 to 40 minutes until hot, bubbly, vegetables are tender, and breadcrumbs are golden.
