French Chocolate Tart Recipe

Instructions

  1. Preheat an oven to 375 F.

  2. Combine flour, sugar, and salt. Cut in chilled butter using a pastry cutter until crumbly with pea-sized pieces.

  3. Add cold water to form a ball, then flatten, wrap, and chill for several hours.

  4. Roll the chilled dough to fit a 10-inch fluted tart pan and press it in.

  5. Line the dough with pie weights and bake for 15 minutes. Remove weights, then bake for another 5 minutes. Cool the pastry shell.

  6. Simmer cream over low-medium heat. Remove from heat, then stir in chocolate and vanilla until smooth.

  7. Whisk a small amount of hot chocolate cream into eggs, then add tempered egg mixture back to the remaining chocolate mixture and whisk until smooth.

  8. Pour chocolate filling into the cooled pastry shell and bake for 18 to 25 minutes, until mostly set.

  9. Cool the tart in the pan on a wire rack for 15 minutes. Remove the tart ring and chill before serving.
