French Canadian Crepes

Instructions

Whisk all ingredients in a large bowl until the batter is smooth.

Chill the batter in the refrigerator for at least 20 minutes.

Melt butter in a crepe pan or skillet over medium-low heat.

Pour 3 tablespoons of batter into the pan, swirling to cover the bottom.

Cook for 1 minute until golden underneath and slightly moist on top.

Loosen edges with a spatula, flip, and cook for 1 more minute until crisp.

Transfer cooked crepe to a plate to keep warm; repeat with remaining batter, adding butter as needed.

Fill, fold, or roll with desired ingredients.
