French Blueberry Balsamic Chicken Recipe

Instructions

  1. Preheat oven to 350 F.

  2. Thaw frozen blueberries, reserving berries and juice.

  3. Season chicken with 1/4 tsp salt and 1/8 tsp black pepper.

  4. Melt butter and oil in a large skillet over medium heat. Brown chicken breasts 3 minutes per side until golden, then transfer to an ovenproof baking dish.

  5. In the same pan, cook shallots for 2 minutes. Add blueberries, juice, balsamic vinegar, honey, rosemary, and remaining salt/pepper. Bring to a rapid boil, then reduce heat to simmer uncovered for 5 minutes.

  6. Pour sauce over chicken in the baking dish, cover, and bake for 30-40 minutes until cooked through.

  7. Rest chicken for 10 minutes at room temperature before serving hot.
