French Blueberry Balsamic Chicken Recipe
A Provençal-inspired chicken dish features a unique sweet and tangy blueberry balsamic sauce.

Instructions

Preheat oven to 350 F.

Thaw frozen blueberries, reserving berries and juice.

Season chicken with 1/4 tsp salt and 1/8 tsp black pepper.

Melt butter and oil in a large skillet over medium heat. Brown chicken breasts 3 minutes per side until golden, then transfer to an ovenproof baking dish.

In the same pan, cook shallots for 2 minutes. Add blueberries, juice, balsamic vinegar, honey, rosemary, and remaining salt/pepper. Bring to a rapid boil, then reduce heat to simmer uncovered for 5 minutes.

Pour sauce over chicken in the baking dish, cover, and bake for 30-40 minutes until cooked through.

Rest chicken for 10 minutes at room temperature before serving hot.
