Instructions

  1. Preheat the oven to 500 F.

  2. Combine all spice rub ingredients in a small bowl to form a paste.

  3. Coat the pork shoulder with the spice rub.

  4. Place the seasoned pork shoulder on a rack in a roasting pan.

  5. Roast for 20 minutes at 500 F.

  6. Reduce oven temperature to 250 F and continue cooking until a probe thermometer registers 140 F.

  7. Remove the roast from the oven, cover loosely with foil, and let rest for 15 minutes to reach 145 F.

  8. Slice and serve.
