Fondue Savoyarde

Instructions

  1. Thoroughly rub the inside of a saucepan with garlic, then discard.

  2. Whisk wine and cornstarch, add to the saucepan, and bring to a gentle boil before reducing heat to a simmer.

  3. Add cheeses, nutmeg, black pepper, and paprika, stirring constantly until melted and smooth; lower heat if cheese sticks.

  4. Continue cooking the fondue for 15 minutes over low-medium heat until thickened, ensuring it does not boil.

  5. Stir in Kirsch and cook for one additional minute.

  6. Pour fondue into a heated fondue pot and serve with cubed bread.
