Instructions

  1. Preheat oven to 350 F.

  2. Place catfish fillets on foil sheets, ensuring each sheet is 4 inches longer than the fish.

  3. Melt margarine in a saucepan, then sauté lemon juice, salt, pepper, carrots, celery, onions, and parsley for several minutes.

  4. Distribute the sautéed vegetable mixture among the fillets, topping each with lemon slices.

  5. Fold the foil securely around the fish to create sealed packets, then arrange them on a baking pan.

  6. Bake for 30 minutes.
