Foie Gras Mousse on Brioche With Apple Wedges

Instructions

  1. Heat a nonstick pan until very hot, then sauté the foie gras for 5 minutes; let cool.

  2. Process the cooled foie gras in a food processor, slowly incorporating the brandy and softened butter.

  3. Blend until the mixture is smooth, then season with salt and pepper to taste.

  4. Transfer the mixture to a serving bowl, cover, and chill for at least 2 hours.

  5. Slice and toast brioche, and cut an apple into wedges.

  6. Serve the chilled foie gras with the toasted brioche and apple wedges.
