Focaccia Bread Recipe
A simple focaccia bread recipe yields a soft, airy interior and a crusty, chewy exterior with minimal effort.

Instructions

Preheat the oven to 425 F and position a rack in the center.

Combine warm water, honey, and yeast, letting it foam for 4-5 minutes.

Whisk flour with 1 1/2 teaspoons fine salt in a large bowl.

Add the yeast mixture and 2 tablespoons olive oil to the flour; stir to form the dough.

Cover the bowl and let the dough rise for 30 minutes.

With wet hands, stretch and fold the dough four times, rotating the bowl a quarter turn between each fold.

Re-cover the bowl and let the dough rise for an additional 1 hour, repeating the stretch and fold process once every 20 minutes.

Let the dough rise again for 30 minutes.

Add 3 tablespoons olive oil to a 10-by-13-inch nonstick baking sheet, greasing the pan first if not nonstick.

Allow the dough to relax for 15 minutes, then stretch it to fill the pan, and let it rise for 15 minutes more.

Dimple the dough thoroughly with your fingers.

Drizzle and spread the remaining 2 tablespoons olive oil over the top, then sprinkle with flaky sea salt and chopped fresh rosemary if desired.

Bake for 20-24 minutes until golden brown, then immediately transfer the bread from the pan to a rack.
