Instructions
-
Heat a griddle or large frying pan to medium-high, then reduce to medium once hot, ensuring an even, hot surface.
-
In a medium bowl, combine 1 cup (120 grams) all-purpose flour, 2 tablespoons granulated sugar, 1 1/4 teaspoons baking powder, 1/4 teaspoon baking soda, and 1/4 teaspoon kosher salt.
-
In a separate bowl, whisk 1 cup plain yogurt with 2 large eggs.
-
Add the yogurt-egg mixture to the dry ingredients and stir to combine, then mix in 2 tablespoons melted unsalted butter or vegetable oil. If the batter is too thick, gradually add 1/4 to 1/3 cup whole milk.
-
Brush oil onto the hot griddle. Spoon batter into cakes and cook for about 2 minutes per side until golden brown, flipping once.
-
Transfer cooked pancakes to a platter and serve hot with desired toppings.
