Instructions

  1. Heat a griddle or large frying pan to medium-high, then reduce to medium once hot, ensuring an even, hot surface.

  2. In a medium bowl, combine 1 cup (120 grams) all-purpose flour, 2 tablespoons granulated sugar, 1 1/4 teaspoons baking powder, 1/4 teaspoon baking soda, and 1/4 teaspoon kosher salt.

  3. In a separate bowl, whisk 1 cup plain yogurt with 2 large eggs.
