Fluffy White Frosting (Boiled Frosting)
A fluffy white frosting is created by slowly beating hot sugar syrup into whipped egg whites.

Instructions

Start boiling sugar, water, corn syrup, and cream of tartar in a saucepan over medium heat, covered.

Once boiling, uncover and continue boiling without stirring until the syrup reaches 242°F, then remove from heat.

Separately, beat egg whites and a pinch of salt until soft peaks form.

While continuously beating, gradually stream the hot syrup into the egg whites.

Incorporate vanilla and continue beating for 8-10 minutes until stiff peaks are achieved.

Use the frosting immediately as it will thicken upon cooling.
