Fluffy White Frosting (Boiled Frosting)

Instructions

  1. Start boiling sugar, water, corn syrup, and cream of tartar in a saucepan over medium heat, covered.

  2. Once boiling, uncover and continue boiling without stirring until the syrup reaches 242°F, then remove from heat.

  3. Separately, beat egg whites and a pinch of salt until soft peaks form.

  4. While continuously beating, gradually stream the hot syrup into the egg whites.

  5. Incorporate vanilla and continue beating for 8-10 minutes until stiff peaks are achieved.

  6. Use the frosting immediately as it will thicken upon cooling.
