Instructions

  1. Preheat the oven to 200 F to keep pancakes warm.

  2. Sift together flour, sugar, baking powder, and salt in a bowl, then create a well in the center.

  3. Whisk almond milk, whole egg, egg yolk, and canola oil in a separate bowl.

  4. Pour the wet mixture into the dry well and mix until just combined, leaving a few lumps.

  5. Heat a lightly oiled skillet or griddle over medium heat.

  6. Spoon about 1/4 cup of batter per pancake onto the hot surface.

  7. Cook until bubbles appear and edges firm up, then flip and cook for 1 to 2 minutes more until golden.

  8. Continue cooking remaining batter, transferring finished pancakes to the warm oven. Serve.
