Instructions

  1. In a large container, dissolve 1/3 cup table salt and 1/3 cup granulated sugar in 6 cups cold water.

  2. Stir in 1/4 cup white vinegar, 1/4 cup red pepper flakes, 2 tablespoons white pepper, and 2 tablespoons freshly ground black pepper to create the brine.

  3. Place 3 pounds chicken wings into a non-metal container and pour the brine mixture over them, ensuring full coverage.

  4. Cover the container and refrigerate for 2 to 4 hours to brine the wings.

  5. Remove the wings, rinse thoroughly, discard the brine, and pat the chicken dry.

  6. Season the wings as desired, cook, and serve.
