Preheat the oven to 475 F.

In a mixing bowl, whisk yeast, sugar, and warm water, then cover and let sit for 5 minutes; concurrently, grease a separate bowl with olive oil.

Once the yeast mixture is foamy, add flour, olive oil, and salt, then blend until a shaggy dough forms.

Knead the dough on a floured surface for about two minutes until smooth, then place it in the greased bowl, cover, and let rest for 45 minutes while preparing toppings.

After resting, deflate the dough, divide it into two, and flatten each piece to approximately 1/4 inch thick on a parchment-lined baking sheet, making divots with your fingers or a fork.

Top the flatbreads with desired ingredients.

Bake for 15 to 20 minutes until the edges are browned and toppings are cooked.
