Instructions

  1. Heat oil in a heavy pot to 375F.

  2. Combine cooked macaroni and cheese with hot sauce, adjusting to desired spice level, then chill for 30 minutes.

  3. Form the chilled macaroni and cheese into balls using an ice-cream scoop. Freeze balls on a parchment-lined sheet for 3 hours until solid.

  4. Crush spicy cheese puffs in a food processor, then mix with breadcrumbs, 1/2 tsp salt, and pepper in a shallow bowl.

  5. Place flour with 1 tsp salt and pepper in a second shallow bowl.

  6. Whisk eggs, milk, and 1/2 tsp salt and pepper in a third shallow bowl.

  7. Remove frozen mac and cheese balls. Dredge each ball sequentially in seasoned flour, then egg mixture, and finally the spicy cheese puff crumb mixture, ensuring full coating. Place coated balls on a baking sheet.

  8. Carefully fry 3-4 coated balls in the hot oil for approximately 5 minutes until golden brown, turning as needed. Drain fried balls on paper towels and repeat with remaining balls.

  9. Serve warm with additional hot sauce and blue cheese dressing.
