Instructions

  1. In a large bowl, combine gram flour, ginger and garlic pastes, turmeric, coriander, cumin, carom seeds, chili powder (if using), salt, and lime juice; mix to form a thick, pancake-like batter, adding water as needed.

  2. Fold fish into the batter, ensuring each piece is coated, then marinate for 1 hour.

  3. Heat oil in a wide pan for deep-frying until hot; test by dropping a small amount of batter, which should sizzle and rise quickly.

  4. Fry battered fish in batches until golden and crisp, 2-3 minutes per side, turning with a slotted spoon.

  5. Remove fried fish with a slotted spoon and drain on paper towels.

  6. Serve hot, garnished with lemon juice and lime wedges, with mint-coriander chutney if desired.
