Fish Head Curry Recipe

Clean salmon head halves by rinsing, patting dry, and removing scales.

Heat oil in a wide frying pan, then sauté shallots, garlic, ginger, tomato, and chilis with a little fish sauce until fragrant and softened (about two minutes).

Stir in curry paste, then pour in coconut milk; season with more fish sauce and bring to a boil.

Lower fish head halves into the sauce, spooning some over them.

Cover, reduce heat, and simmer for 12 to 15 minutes or until done, adjusting seasoning with fish sauce as needed.

Transfer fish heads to a serving bowl, pour sauce over, and garnish with fried onions, toasted garlic, and cilantro before serving.
