Instructions

  1. Dissolve salt and sugar in water within a large bowl.

  2. Add remaining brine ingredients and ice, stirring until the mixture is fully chilled.

  3. Pour the brine into a heavy gallon zipper bag or lidded container, add the fish, and seal while expelling excess air.

  4. Refrigerate the brined fish overnight, then remove it 30 minutes before cooking. Rinse with cold water prior to preparation.
