Fırın Sütlaç (Turkish Baked Rice Pudding)
A sweet, comforting Turkish-style rice pudding bakes to a delightful custard-like texture.

Instructions

Preheat the oven to 350°F (180°C).

Rinse the rice until the water runs clear.

In a large saucepan, cover the rice with about 1/2 inch of water, bring to a boil, then simmer for 5 minutes until softened.

Stir in 3 3/4 cups milk, sugar, and vanilla extract; bring to a gentle boil for 10 minutes.

Whisk 1 cup milk and cornstarch until smooth, then gradually add to the rice mixture while stirring.

Increase heat and stir the pudding for 4-5 minutes until scalding, then continue cooking and stirring for 2 more minutes until thickened.

Remove from heat and spoon the hot pudding into ovenproof dessert cups.

Combine the egg yolk with the remaining 3 tablespoons of milk.

Drizzle the egg-milk mixture onto the center of each pudding cup, then gently swirl it to cover the top.

Bake the cups for about 20 minutes until the tops are browned.

Cool at room temperature, then refrigerate for several hours before serving.
